Salmon Pâté with Roasted Red Pepper and Chives Recipes
Ingredients :
2 small red peppers
1 pound cooked salmon
2 tbsp lemon juice
1 small yellow onion, minced
3 garlic cloves, minced
1/4 cup finely chopped chives
1/2 cup soy mayonnaise
Method :
Place peppers
on a baking sheet in a 400C oven for 30 minutes, turning several times
until evenly charred on all sides. Wrap peppers in a damp towel to cool,
then cut in half and remove stems and seeds. Crumble salmon into a
medium mixing bowl and sprinkle with lemon juice. Add onion, garlic, and
chives, and mix well. Briefly purée roasted peppers with mayonnaise
until well mixed (don't blend too long - leave some chunks of pepper for
texture). Stir mayonnaise mixture into salmon and blend well.
Refrigerator thoroughly until well chilled and flavors are completely
combined.
A wonderful
way to use leftover salmon. Smoky roasted pepper and fresh green chives
make this a rich, satisfying, nutritious party appetizer.
