Wash, dry,
and pick over the berries. Crush enough berries by hand or by quickly
pulsing in a food processor to produce 6 cups.
In a large
non-aluminum pot, combine the ingredients except the Certo, taking care
to fill the pot only one third full. Bring to a full boil and cook over
high heat, stirring constantly with a stainless steel spoon, for 1
minute. Remove from the heat.
Stir in the
Certo. Skim off the foam with a metal spoon and discard it. Prepare ten
8 ounce glass canning jars and fill and seal.
The spices
make this jam uniquely flavorful and aromatic.
