Sandwich with Spiced Red Pepper Puree, Cucumbers and Greens Recipes
Ingredients :
2 large red bell peppers
1 tbsp finely minced garlic
2-3 finely minced jalapeno peppers
2 tsp ground toasted cumin seed
3 tbsp lemon juice
salt, pepper
1/2 cup nonfat plain yogurt
1 tsp grated lemon zest
3 tbsp chopped mint
1 large cucumber, sliced 1/8 inch thick,
peeled and seeded if necessary (English cucumbers won't need peeling)
4 large pita breads, or 8 slices
whole-grain bread
2 bunches of watercress, stems removed
16 mint leaves
Method :
Roast the peppers in the broiler, over a
grill, or directly on a gas flame. Turn them often until well charred on
all sides. Put them in a plastic container to steam for about 15
minutes. Peel, seed, and chop coarsely. Place the peppers, garlic,
jalapeno peppers, cumin, and lemon juice in the container of a food
processor. Pulse quickly to chop and blend. Season with salt and pepper. Season the
yogurt with lemon zest, mint, salt and pepper.
Assemble the
sandwiches. If using pita breads, cut them in half. Open the pocket and
spread the minted yogurt on one side. Top with cucumber slices. Put the
pepper puree over the cucumbers and tuck the watercress and mint leaves
over the pepper puree. If using
sliced bread, spread yogurt on half the bread and top that side with
cucumbers. Put the pepper puree on the other side and top with
watercress and mint. Cover with a second slice of bread and cut in half.
Serves 4
In Greece and Turkey spicy roasted red
pepper purees are often served at the start of a meal, accompanied by
pita bread. Why not add some sliced cucumbers, greens, and a little
minted yogurt for a tasty Middle Eastern sandwich?
