Hot and Sour Prawn Recipes

Ingredients :

1.2 liters Thai fish stock

4 lime leaves, torn

2 lemon grass stalk, finely sliced diagonally

2.5cm piece of galangal or fresh root ginger, sliced

1 tbsp palm sugar

5 tbsp lime juice

2 tbsp chili oil

12-15 prawns

salt and pepper

coriander sprigs, to garnish

Method :
  1. Put the stock, lime leaves, lemon grass, galangal or ginger, sugar, lime juice, chili oil, in saucepan, bring to boil.

  2. Lower the heat, simmer for 15 minutes.

  3. Add prawns, cook 1 minute until turned pink and are cooked through.

  4. Season to taste with salt and pepper.

  5. Ready to serve, garnished with sprigs of coriander.

Serves 4
