Hot and Sour Prawn Recipes

Ingredients : |
1.2 liters Thai fish stock
4 lime leaves, torn
2 lemon grass stalk, finely sliced
diagonally
2.5cm piece of galangal or fresh root
ginger, sliced
1 tbsp palm sugar
5 tbsp lime juice
2 tbsp chili oil
12-15 prawns
salt and pepper
coriander sprigs, to garnish |
Method :

Put the stock, lime leaves, lemon
grass, galangal or ginger, sugar, lime juice, chili oil, in
saucepan, bring to boil.

Lower the heat, simmer for 15 minutes.

Add prawns, cook 1 minute until turned
pink and are cooked through.

Season to taste with salt and pepper.

Ready to serve, garnished with sprigs
of coriander.
