Curried Cauliflower Soup Recipes

Ingredients :

1 tbsp sunflower oil

1 onion, sliced

2 tsp curry powder

1 small cauliflower, roughly chopped

1.5 pints chicken stock

salt and pepper

4 tbsp sunflower seeds, to garnish

Method :
  1. Heat the oil in a large saucepan.

  2. Add the onion and fry over a moderate heat for 2 minutes.

  3. Stir in the curry powder and cook for 1 minute.

  4. Add the cauliflower and stock, season with salt and pepper and bring to the boil.

  5. Cover the pan, lower the heat and simmer for 20 minutes.

  6. Cool slightly, then transfer the vegetables and stock to a blender and process to a smooth puree.

  7. Return the puree to the rinsed pan.

  8. Taste and adjust the seasoning if necessary and reheat.

  9. Serve the soup in warmed bowls, garnished with the sunflower seeds.
