Slice the onions and tomatoes very thinly
and place in a bowl. Slice the chili lengthways, discard the seeds, then
chop very finely. Peel and slice the cucumber and carrot and add to the
onions and tomatoes. Squeeze the lemon juice over the salad. Season with
salt and freshly ground black pepper and toss together to mix. Serve as
an accompaniment, salad or relish.

Traditional Katchumbali is made by very
finely chopping the onions, tomatoes, cucumber and carrot. This produces
a very moist, sauce-like mixture, which is good served inside chapatis,
and eaten as a snack.
