Smoked Beef Ribs with Spicy Marmite Sauce Recipes

Ingredients :

400g beef ribs

2 pcs star anise

1 pc  cinnamon stock

300gm onion

100gm garlic

300gm white radish

2 liter water

5 tbsp Marmite

200g San Remo Tomato Paste

400gm Plain flour

200gm butter unsalted

10gm black pepper coarse

10gm paprika

Marmite Sauce

3 tbsp Marmite

5ml Tabasco Sauce

10ml LP Worcestershire Sauce

300ml water

3 tbsp Plum Sauce

salt

cooking oil

Method :

Marinate the beef ribs with paprika, black pepper and salt for 6 hours. Roux: Melt butter in a pan, add flour a little at a time. Stir until all flour is absorbed by the butter. Seal the marinated rib over high heat in a pot. Add garlic and onion and fry together in oil. Add star anise and cinnamon stick.

Add in tomato paste and stir till paste looks a little oily. Mix the Marmite with water. Pour Marmite mixture into pot, let it boil and skim. Stir in the roux and add in the radish. Bring to boil and simmer until ribs are tender.

Make Marmite Sauce - Mix the ingredients together and bring to boil check and adjust the sweetness.

To serve - When ribs are ready, take out from the pot and paper towel till dry. Roast the ribs on a tray in preheated oven of 160C for 20 minutes. Glace with the Marmite sauce and finish in the griller.
