Malabar Lamb Curry Recipes

Ingredients :

3 tbsp oil or ghee

2 onions, finely chopped

1 tsp turmeric

1 tbsp ground coriander

1 tsp ground cumin

2 tsp chili powder

1/2 tsp ground cloves

12 curry leaves

750g / 1.5lb boned leg of lamb, cubed

1 tbsp coarsely grated coconut

300ml / 1/2 pint water

1 tsp salt

Method :

Heat the oil or ghee in a saucepan. Add the onions and fry until golden. Stir in the turmeric, coriander, cumin, chili powder, cloves and curry leaves and fry for 1-2 minutes. Add the lamb and coconut and fry, stirring, until well browned. Pour in the water and add the salt. Cover and simmer for 45 minutes or until the lamb is tender. Transfer to a warmed serving dish and serve immediately.
