Place the chick-peas, tahini paste,
garlic, lemon juice, seasoning and a little of the water in a blender or
food processor. Process until smooth adding a little more water, if
necessary. Alternatively
if you don't have a blender or food processor, mix the ingredients
together in a small bowl until smooth in consistency. Spoon the
mixture into a shallow dish. Make a dent in the middle and pour the
olive oil into it. Garnish with parsley, cayenne and olives and serve
with the radishes.

This popular
Middle Eastern dip is widely available in supermarkets, but nothing
compares with the delicious home-made variety. Canned chick
peas can be used for hummus. Drain and rinse under cold water before
processing.
