Hummus Recipes

Ingredients :

1 cup cooked chick-peas

1/2 cup tahini paste

3 garlic cloves

juice of 2 lemons

3-4 tbsp water

salt and freshly ground black pepper

fresh radishes, to serve

For the garnish:

1 tbsp olive oil

1 tbsp finely chopped fresh parsley

1/2 tsp cayenne pepper

4 black olives

Method :

Place the chick-peas, tahini paste, garlic, lemon juice, seasoning and a little of the water in a blender or food processor. Process until smooth adding a little more water, if necessary. Alternatively if you don't have a blender or food processor, mix the ingredients together in a small bowl until smooth in consistency. Spoon the mixture into a shallow dish. Make a dent in the middle and pour the olive oil into it. Garnish with parsley, cayenne and olives and serve with the radishes.

Serves 4-6

This popular Middle Eastern dip is widely available in supermarkets, but nothing compares with the delicious home-made variety. Canned chick peas can be used for hummus. Drain and rinse under cold water before processing.
