Egg and Coconut Curry Recipes

Ingredients : |
2-3 tbsp oil
2inch cinnamon stick
6 cardamom pods
6 cloves
2 onions, finely chopped
2 garlic cloves, finely chopped
1 inch of fresh root ginger, grated
4 green chilies, 2 finely chopped, 2 slit
450ml thick coconut milk
1/4 tsp freshly grated nutmeg
6 hard-boiled eggs, peeled and halved

Method :

Heat the oil, add cinnamon, cardamom
pods, cloves, fry for a few seconds.

As the spices change color, add
onions, garlic, ginger and chopped chilies, fry gently, stir, until
soft and golden

Pour coconut milk and bring to boil.

Add nutmeg, slit chilies and salt,
simmer 10 minutes, or until the sauce is thick.

Add eggs, simmer for 5 minutes.

Transfer to a warmed serving dish.

Ready to serve
