Heat 1/2 cup
water and the soy sauce in a large pan, then add the onions and garlic.
Cook over medium heat until the onions are soft, about 5 minutes. Add
the oregano, cumin, black pepper, and diced chilies. Cook 5 minutes over
medium heat. Add the tomatoes, black beans and salt. Cover and simmer 20
minutes or longer. Top with a sprinkling of chopped fresh cilantro.
This is a
mild chili, delicious with brown rice and a green salad. If you like a
hotter chili, add some cayenne or chopped jalapeņo peppers.
