Quick Black Bean Chili Recipes

Ingredients :

1 tbsp soy sauce

2 onions, chopped

4 cloves garlic, crushed

2 tsp dried oregano

1/2 tsp cumin

1/4 tsp black pepper

1 4 ounce can diced chilies

1 15 ounce can crushed tomatoes

2 15 ounce cans black beans, drained and rinsed

1/4 tsp salt

chopped cilantro

Method :

Heat 1/2 cup water and the soy sauce in a large pan, then add the onions and garlic. Cook over medium heat until the onions are soft, about 5 minutes. Add the oregano, cumin, black pepper, and diced chilies. Cook 5 minutes over medium heat. Add the tomatoes, black beans and salt. Cover and simmer 20 minutes or longer. Top with a sprinkling of chopped fresh cilantro.

This is a mild chili, delicious with brown rice and a green salad. If you like a hotter chili, add some cayenne or chopped jalapeņo peppers.

Serves 4 - 6
