Curried Corn Soup Recipes

Ingredients :

2 cups raw corn (cut from cobs)

1 tbsp finely chopped onion

1 cup milk

2 tbsp butter

1.2 tsp curry powder

1 cup light cream

1/2 tsp salt

1/8 tsp pepper

chopped parsley

Method :

Combine onion, corn and milk in medium saucepan. Bring to a boil. Turn down heat, cover and simmer 20 minutes. Pour into blender and buzz until nearly smooth. Heat butter in same saucepan. Add curry powder and cook gently 3 minutes, stirring. Stir in corn mixture, cream, salt and pepper. Heat, stirring constantly. Taste and add more seasoning if needed. Serve sprinkled with parsley.

Serves 4 - 6
