Tabbouleh Recipes

Ingredients :

1/2 cup burghul (cracked wheat)

2 large ripe tomatoes, skinned and finely chopped

1 small onion, finely chopped

1 cup chopped parsley

ground black pepper

2 tsp olive oil

2 tbsp lemon juice

1 tbsp finely chopped mint

Method :

Place burghul in a deep bowl, cover with boiling water and allow to stand for 2 hours. Drain well by squeezing in a clean muslin cloth or tea towel, and return to bowl. Add the tomatoes, onion, parsley, pepper, oil, lemon juice and mint. Combine well and chill for 1 hour before serving.

Serves 4 - 6
