2 medium cucumbers, pared, seeded and
diced
1 medium serrano or jalapeno pepper,
seeded and thinly sliced
1/2 cup cider vinegar
1/4 cup diced red onion
1/2 tsp caraway seeds, toasted *
1/4 tsp salt
* To toast caraway seeds, in small
nonstick skillet, cook seeds over low heat, stirring constantly, 3
minutes, until fragrant. |
Method :
In small
bowl, combine cucumbers, pepper, vinegar, onion, caraway seeds and salt.
Just before serving, drain cucumber mixture, discarding liquid.
