Hot Potato Salad Recipes

Ingredients :

4 medium potatoes, scrubbed

2 hard boiled eggs, chopped

2-3 spring onions, finely chopped

1/2 recipe Vinaigrette Dressing

1. Cut the unpeeled potatoes into 2 cm (1") cubes.
2. Place in a saucepan and add enough cold water to barely cover.
3. Bring to the boil, reduce heat and simmer for 10-12 minutes, or until the potato is cooked through but holds its shape.
4. Drain the cooked potato and place in a salad bowl.
5. Add the hard boiled eggs and spring onion to the hot potato.
6. Pour over the Vinaigrette Dressing.
7. Gently toss the salad.

Serve this salad hot, with grilled fish or meat.
