Rice and Peppers Recipes

Ingredients :

1/4 cup cooking oil

1 cup regular long-grain rice

2 large green peppers, seeded and cut in 1-inch (2.5cm) squares

1 medium onion, chopped

19-oz can tomato juice

1/2 cup ketchup

1 tsp salt

1/4 tsp pepper

Method :

Heat oven to 350F (175C). Grease a 1 1/2-qt (2-liter) casserole. Heat oil in medium saucepan. Add rice. Cook over moderate heat until rice is golden, stirring. Add pepper pieces and onion and cook gently 1 minute. Stir in all remaining ingredients. Heat to boiling. Pour into prepared casserole. Cover and bake about 45 minutes or until liquid is absorbed and rice is tender. Especially good served with chicken, fish or veal.
