Spicy Duck Tongues Marinated with Tea Recipes

Ingredients :

200g duck tongues

 

Spicy Marinade -

1 cup water

1/2 cup dark soy sauce

2 tbsp rock sugar

2 pieces cinnamon stick

4 star aniseeds

2 Tsaoko Amomum fruit

a few cloves

2 tbsp Chinese black tea leaves

Method :

Blanch duck tongues in boiling water for a minute. Drain and set aside. Boil spicy marinade ingredients (except tea leaves) for 20 minutes. Add tea leaves and simmer for another 5 minutes. Strain the liquid. Re-boil the marinade. Put duck tongues in and simmer for 5 minutes. Leave to soak for 1 hour. Serve cold. Use any type of tea leaves you like in this recipe as we prefer. Duck tongues are cooked quite quickly and need short cooking time.

Serves 4-6
