Hot Pot Chicken in Shaoxing Wine Recipes

Ingredients :

1/2 chicken

2 cups water

1 tbsp Qi Zi

4 slices Huai Shan

4 strips Bei Qi

4 slices ginger

1 cup Shaoxing wine


Marinade -

1/2 tsp salt

1/2 tsp sugar

1 tsp cornflour

1 tbsp light soy sauce

1 tbsp Shaoxing wine

1 tbsp ginger juice

Method :

Chop chicken into pieces. Mix in marinade and leave it for 15 minutes. Rinse the herbal ingredients. Bring water to the boil. Put the herbal ingredients and ginger in. Simmer for 30 minutes. Pour in Shaoxing wine. Bring to the boil again. Add chicken and simmer over gentle heat for 20 minutes until done. Serve hot.

Shaoxing wine is a kind of Chinese wine with a brown color and an alcohol content of 16%. It is most commonly used in Drunken Chicken.

Serves  4-6
