Garlic and Chili Marinated Beef with Corn-crusted Onion Rings Recipes

Ingredients :

20g large mild dried red chilies (such as mulato or pasilla)

2 garlic cloves, plain or smoked finely chopped

5ml ground toasted cumin seeds

5ml dried oregano

60ml olive oil

4 beef steaks (rump or rib-eye), about 175-225g each

salt and freshly ground black pepper

for the Onion Rings

2 onions, sliced and separated into rings

250ml milk

75g coarse polenta

2.5ml dried red chili flakes

5ml ground toasted cumin seeds

5ml dried oregano

vegetable oil, for deep frying

Method :

Cut the stalks from the chilies and discard the seeds. Toast the chilies in a dry frying pan for 2-4 minutes until they give off their aroma. Place the chilies in a bowl, cover with warm water and leave them to soak for 20-30 minutes.

Drain the chilies, reserving the water. Process them with the garlic, toasted cumin seeds, oregano and oil in a food processor or blender to make a thin paste. Add a little of the soaking water if necessary. Season with freshly ground black pepper. Wash and dry the steaks, rub the chili marinade all over them and leave to marinate for up to 12 hours. To make the fried onion rings, soak the onions in the milk for 30 minutes.

Mix the polenta, dried chili flakes, ground toasted cumin seeds and oregano and season with salt and pepper. Heat the oil for deep frying to 325-350F or until a cube of day old bread browns in about 30-60 seconds.

Drain the onion rings and dip them into the polenta mixture to coat them thoroughly. Deep fry for 2-4 minutes until they are browned and crisp. Do not overcrowd the pan, but cook in batches and keep warm. Drain them on kitchen paper. Heat a barbecue or cast iron grill pan. Season the steaks with salt and grill for about 4 minutes on each side for a medium result; reduce or increase this time according to how rare or well done you like steak. Serve the steaks wit the onion rings.

Fruity, smoky and milk Mexican chilies combine well with garlic in this marinade for grilled steak. Polenta makes a crisp coating for the accompanying fried onion rings.
