Slit the pork
fillets lengthways and cut each half into quarters. Prick the pieces all
over with a fork. Roughly pound the coriander with a pestle and mortar,
then mix it together with the pepper, paprika and salt to taste and rub
into the meat on both sides. Leave to marinate for 1 hour.
Heat the oil
in a pan, add the meat and fry quickly on both sides to seal. Reduce the
heat and saute for 5 minutes or until cooked through, stirring and
turning to prevent it burning.
Sprinkle with
the coriander, if liked, and serve with a tomato and red onion salad.

This is a delicious way to prepare pork.
As this dish is not cooked in a sauce, it can be served with any number
of accompaniments.
