12oz okra, topped, tailed and cut into
1-inch lengths
1 tsp curry powder
2 tsp shrimp paste
1 tbsp chopped fresh coriander
1 tbsp lemon juice
6 oz prepared saltfish, shredded
Method :
Season the prawns with the spice seasoning
and leave to marinate in a cool place for about 60 minutes.
Heat the
butter or margarine and olive oil in a large frying pan or wok over a
moderate heat and stir-fry the shallots and garlic for 5 minutes. Add
the okra, curry powder and shrimp paste, stir well and cook for about 10
minutes, until the okra is tender.
Add 2 tbsp
water, coriander, lemon juice, prawns and saltfish, and cook gently for
5-10 minutes. Adjust the seasoning and serve hot.
Serves 4
Shrimp paste and spices add tasty flavor
to this fish dish. Soak the saltfish for 12 hours, changing the water
two or three times. Rinse, bring to the boil in fresh water, then cool.
